  • ¾ pound deli-sliced roast beef
  • 8 slices provolone cheese, halved
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon chopped fresh parsley (optional)
  • 2 tablespoons unsalted butter
  • 1 tablespoon flour
  • 2 cups beef broth (low sodium)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish or line it with parchment paper for easy cleanup.
  2. On a clean surface, gently flatten each biscuit into a 4-inch round using your hands or a rolling pin. Don’t worry if they’re not perfectly round—rustic is part of the charm.
  3. Layer each biscuit round with a few slices of roast beef and half a slice of provolone. Fold the dough over the filling, pinch the edges to seal, and place the sealed side down in the baking dish.
  4. In a small bowl, mix the melted butter with garlic powder, onion powder, and chopped parsley. Brush the tops of the biscuits generously with this flavorful butter blend.
  5. Bake in the preheated oven for 15–18 minutes, or until the tops are golden brown and the biscuits are cooked through. Keep an eye on them toward the end—they brown quickly.
  6. While the biscuits are baking, melt 2 tablespoons of butter in a small saucepan over medium heat. Whisk in the flour to make a quick roux, cooking for about 1 minute. Gradually add the beef broth while whisking, then stir in garlic powder, onion powder, salt, and pepper. Let the sauce simmer until slightly thickened, about 5–7 minutes.
  7. Serve the warm biscuits with small bowls of au jus on the side for dipping. They’re best enjoyed fresh out of the oven while the cheese is still gooey and the biscuit edges are crisp.
