Beef and Cheese Burritos

Description

Delicious beef and cheese burritos packed with flavor and easy to make.


Ingredients

  • 2 lbs ground beef (80/20 preferred)
  • 1 large yellow onion, finely diced
  • 45 cloves garlic, minced (or 2 tbsp)
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried Mexican oregano
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 1/2 cup fresh cilantro, chopped
  • 12 tbsp fresh lime juice
  • 12 tbsp vegetable oil
  • 1216 large flour tortillas (1012 inches)
  • 34 cups shredded cheese blend (Monterey Jack, sharp cheddar, or Mexican)
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed and drained

Instructions

  1. In a large skillet over medium heat, heat the vegetable oil and add the diced onion. Cook until translucent.
  2. Add the minced garlic and cook for an additional minute.
  3. Add the ground beef, break it apart, and cook until browned.
  4. Stir in the tomato paste, chili powder, ground cumin, smoked paprika, Mexican oregano, cayenne pepper, salt, and black pepper. Mix well.
  5. Add the beef broth and bring to a simmer. Let it cook for about 10 minutes to blend the flavors.
  6. Remove from heat and stir in chopped cilantro and lime juice.
  7. In a separate bowl, combine cooked rice, black beans, and cheese blend.
  8. To assemble, scoop beef mixture onto a tortilla, top with rice and bean mixture, and roll up tightly. Repeat with remaining ingredients.

Notes

  • For extra flavor, let the beef mixture simmer longer to develop a richer taste.
  • Feel free to add other toppings like sour cream or avocado.
