Delicious beef and cheese burritos packed with flavor and easy to make.
Ingredients

- 2 lbs ground beef (80/20 preferred)
- 1 large yellow onion, finely diced
- 4–5 cloves garlic, minced (or 2 tbsp)
- 2 tbsp tomato paste
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried Mexican oregano
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup beef broth
- 1/2 cup fresh cilantro, chopped
- 1–2 tbsp fresh lime juice
- 1–2 tbsp vegetable oil
- 12–16 large flour tortillas (10–12 inches)
- 3–4 cups shredded cheese blend (Monterey Jack, sharp cheddar, or Mexican)
- 2 cups cooked rice (white or brown)
- 1 can (15 oz) black beans, rinsed and drained
Instructions
- In a large skillet over medium heat, heat the vegetable oil and add the diced onion. Cook until translucent.
- Add the minced garlic and cook for an additional minute.
- Add the ground beef, break it apart, and cook until browned.
- Stir in the tomato paste, chili powder, ground cumin, smoked paprika, Mexican oregano, cayenne pepper, salt, and black pepper. Mix well.
- Add the beef broth and bring to a simmer. Let it cook for about 10 minutes to blend the flavors.
- Remove from heat and stir in chopped cilantro and lime juice.
- In a separate bowl, combine cooked rice, black beans, and cheese blend.
- To assemble, scoop beef mixture onto a tortilla, top with rice and bean mixture, and roll up tightly. Repeat with remaining ingredients.
Notes
- For extra flavor, let the beef mixture simmer longer to develop a richer taste.
- Feel free to add other toppings like sour cream or avocado.
