Description

A delicious cheesy beef and rice casserole that’s easy to make and perfect for the whole family.


Ingredients

  • 1 lb lean ground beef
  • 2 cups long-grain white rice (uncooked)
  • 2 cups sharp cheddar cheese (grated)
  • 1 medium onion (diced)
  • 1 bell pepper (diced)
  • 1 tsp garlic powder
  • 15 oz canned tomato sauce
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat. Add onion and bell pepper; sauté until softened (about 5 minutes).
  3. Stir in garlic powder, salt, pepper, tomato sauce, and chicken broth; simmer for 3 minutes.
  4. In a large bowl, combine cooked rice with the beef mixture and half of the cheddar cheese; mix well.
  5. Transfer the mixture to the prepared baking dish, topping with remaining cheese. Bake uncovered for 25-30 minutes until bubbly and golden brown.
  6. Let cool for a few minutes before serving.
