Description

Delicious baked apples stuffed with a mixture of nuts, dried fruits, and spices, perfect for a warm dessert.


Ingredients

  • 1 1/2 cups nuts: combination of pecans and walnuts
  • 1 tsp freshly grated orange zest
  • 1/4 cup dried cherries
  • 1/4 cup pitted dates (medjool are recommended)
  • 2 tsp cinnamon powder
  • 2 tsp whole fennel seeds (toasted and lightly ground)
  • 1 tsp cardamom powder
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp fresh ginger, grated
  • 2 tbsp orange juice or water
  • 1/4 cup maple syrup
  • 6 medium-sized apples: Honey Crisp, Gala, Johnathan, Braeburn, Pink lady

Instructions

  1. Preheat the oven to 350°F.
  2. In a food processor, pulse together pecans, walnuts, orange zest, dried cherries, dates, cinnamon, fennel seed, cardamom, nutmeg, and ginger until coarsely chopped.
  3. Add orange juice and maple syrup and pulse 2-3 times to incorporate.
  4. Using an apple corer or knife, remove the core from the apples and peel away a ⅓-inch from the edge.
  5. Divide the filling mixture into 6 clumps and stuff each apple.
  6. Place the stuffed apples in an oiled baking pan (coconut oil works well).
  7. Cover with foil and bake for 45-70 minutes, depending on the size and type of apples used, until they pierce easily with a knife.
