A hearty and delicious pumpkin turkey chili that’s perfect for a cozy meal.

- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 can (15 ounces) pumpkin puree
- 1 can (14 ounces) diced tomatoes
- 1 can (15 ounces) white beans, drained and rinsed
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 ounces cream cheese
- 2 tablespoons fresh parsley or cilantro (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and cook until fragrant and soft, about 3–4 minutes.
- Add the ground turkey and cook until fully browned, breaking it up as it cooks.
- Stir in the pumpkin puree and diced tomatoes. Simmer for 2 minutes.
- Pour in the chicken broth. Add the white beans, cumin, smoked paprika, chili powder, salt, and pepper. Stir to combine.
- Bring to a low boil, then reduce heat and let simmer for 20–25 minutes, covered.
- Stir in the cream cheese until fully melted and incorporated. Adjust seasoning if needed.
- Serve hot, garnished with fresh herbs if desired.
Notes
- This chili can be stored in the refrigerator for up to 3 days.
- It can also be frozen for up to 3 months.
