Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, diced
  • 1 can (4 oz) diced green chiles
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Fresh cilantro for garnish

Instructions

  1. Dice chicken breasts into bite-sized pieces. Heat oil in a large pot over medium heat until shimmering.
  2. Sauté diced onions and minced garlic for about 3-5 minutes until fragrant.
  3. Add chicken pieces to the pot; cook until lightly browned.
  4. Stir in white beans, chicken broth, green chiles, cumin, and chili powder.
  5. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 20-30 minutes.
  6. Taste and adjust seasoning as needed. Serve hot garnished with fresh cilantro.
