- 4 boneless, skinless chicken breasts (about 1 lbs)
- 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 4 cloves fresh garlic, minced
- 1 medium yellow onion, diced
- 1 can (4 oz) diced green chiles
- 2 tsp ground cumin
- 2 tsp chili powder
- Fresh cilantro for garnish
Instructions
- Dice chicken breasts into bite-sized pieces. Heat oil in a large pot over medium heat until shimmering.
- Sauté diced onions and minced garlic for about 3-5 minutes until fragrant.
- Add chicken pieces to the pot; cook until lightly browned.
- Stir in white beans, chicken broth, green chiles, cumin, and chili powder.
- Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 20-30 minutes.
- Taste and adjust seasoning as needed. Serve hot garnished with fresh cilantro.
