- 8 oz whole wheat spaghetti
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- ¼ cup grated Parmesan cheese
Instructions
- In a large pot, boil salted water and cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Once hot, sauté minced garlic until fragrant (about 1 minute).
- Stir in halved cherry tomatoes and cook until tender (about 3 minutes).
- Add fresh spinach to the skillet, stirring until wilted (about 2 minutes).
- Toss cooked spaghetti into the skillet with veggies, mixing gently to combine all flavors.
- Plate the dish and garnish with freshly grated Parmesan cheese.
Notes
- This recipe can be easily scaled up or down depending on servings needed.
