Description
This delicious Mixed Berry Icebox Cake features layers of creamy vanilla, honey graham crackers, and fresh berries.

- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (3 oz) box instant vanilla pudding mix
- 1 1/2 cups cold milk
- 36–40 whole honey graham crackers
- 4 cups mixed fresh berries (strawberries sliced, blueberries, raspberries)
- Fresh mint leaves for garnish (optional)
Instructions
- In a large chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form. Set aside.
- In a separate medium bowl, whisk the instant vanilla pudding mix with cold milk for about 2 minutes until thickened.
- Gently fold the prepared vanilla pudding into the whipped cream until fully combined and smooth. This is your creamy vanilla layer.
- To assemble, spread a thin layer of the cream mixture on the bottom of a 9×13-inch baking dish. This helps the crackers stay in place.
- Arrange a single layer of graham crackers over the cream, breaking them as needed to fit.
- Spread one-third of the remaining cream mixture over the crackers. Top with one-third of the fresh berries.
- Repeat the layers: graham crackers, cream, and berries two more times, ending with a final layer of cream and berries on top.
- Cover tightly with plastic wrap and refrigerate for at least 8 hours, preferably overnight. The crackers will soften into a cake-like texture.
- Garnish with fresh mint leaves before serving, if desired. Slice and enjoy chilled.

- This dessert can be made a day in advance for better flavor.
