A delicious homemade pancake mix that you can store and use anytime!
Ingredients

- 8 cups all-purpose flour
- 1 cup sugar
- 2 Tbsp baking soda
- 2 tsp salt
- 2 1/4 cups pancake mix (above)
- 2 eggs
- 1/4 cup shortening
- 2 1/4 cups buttermilk
Instructions
- Combine all the ingredients and store in an airtight container or zip-loc bag.
- Pre-heat the Griddle or Pan over medium-low heat.
- Combine 2 1/4 cups of pancake mix, two eggs, shortening, and buttermilk.
- Pour 1/2 cup of batter onto the griddle (makes large pancakes) and cook until bubbles form on top. Flip and continue to cook through (2 minutes).
Notes
- This pancake mix can be stored for a long time and used whenever you crave pancakes.
- For fluffier pancakes, let the batter rest for a few minutes before cooking.
