Description

Deliciously baked salmon fillets with a creamy, spicy sauce and fresh avocado cucumber salsa.


Ingredients

  • 1 lb salmon fillets (skinless)
  • 1/4 cup mayonnaise
  • 2 tbsp sriracha sauce
  • 1 tbsp honey
  • 2 tbsp lime juice (divided)
  • 1 cup cucumbers, diced
  • 1 ripe avocado, diced
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets on the baking sheet; season with salt and pepper.
  3. In a small bowl, whisk together mayonnaise, sriracha, honey, and 1 tablespoon lime juice until smooth.
  4. Generously coat each salmon fillet with the bang bang sauce.
  5. Bake for 12-15 minutes or until salmon flakes easily with a fork.
  6. While baking, combine cucumbers, avocado, remaining lime juice, salt, pepper, and cilantro in a bowl for the salsa.
  7. Serve baked salmon topped with salsa and extra bang bang sauce if desired.
