- 2 ½ cups all-purpose flour, sifted
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large eggs, room temperature
- 1 tablespoon pure vanilla extract
- 1 cup whole milk, room temperature
- Zest of 1 organic lemon (optional)
- Confectioners’ sugar (for dusting, optional)
- Fresh berries (optional)
- 1 cup confectioners’ sugar (for glaze, optional)
- 2–3 tablespoons fresh lemon juice (for glaze, optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, baking powder, and salt.
- In another bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and lemon zest.
- Gradually add the flour mixture alternately with the milk, starting and ending with the flour mixture.
- Pour the batter into a greased cake pan and smooth the top.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool before glazing.
- For the glaze, mix confectioners’ sugar with lemon juice until smooth and drizzle over the cooled cake.
