Ingredients

  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup whole milk, room temperature
  • Zest of 1 organic lemon (optional)
  • Confectioners’ sugar (for dusting, optional)
  • Fresh berries (optional)
  • 1 cup confectioners’ sugar (for glaze, optional)
  • 23 tablespoons fresh lemon juice (for glaze, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking powder, and salt.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and lemon zest.
  6. Gradually add the flour mixture alternately with the milk, starting and ending with the flour mixture.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake for about 25-30 minutes or until a toothpick comes out clean.
  9. Let the cake cool before glazing.
  10. For the glaze, mix confectioners’ sugar with lemon juice until smooth and drizzle over the cooled cake.
