Instant Pot Beef Stew: Easy, Hearty Comfort in a Bowl

Introduction to Instant Pot Beef Stew

Imagine returning home after a long day, greeted by the savory aroma of instant pot beef stew wafting through the house. That’s the magic of using an Instant Pot for this classic comfort food—your favorite ingredients meld together during a fraction of the time it usually takes on the stovetop. The result? Tender, flavorful beef and vegetables in a rich broth that’s ready in less than an hour, making it a perfect meal for busy professionals.

The beauty of an Instant Pot isn’t just its speed; it’s also about convenience and consistency. Gone are the days of hovering over a pot for hours, waiting for those tough cuts of beef to become deliciously fork-tender. With a pressure cooker, you can turn even the most challenging cuts into culinary masterpieces effortlessly. Plus, the “set it and forget it” capability means you have more time for yourself or to unwind with friends, rather than being chained to the kitchen.

Why Instant Pot Beef Stew is a Game Changer

  1. Speed: Traditional beef stew may require several hours of slow cooking, but the Instant Pot significantly shortens that time. You can enjoy a hearty meal in about 45 minutes, making it feasible even after a long day at work.

  2. Flavor: The pressure cooking method allows your seasonings and ingredients to bond in a way that slow cooking simply can’t match. It creates a deep, rich flavor that you usually need time to develop.

  3. Versatility: Whether you’re using beef chuck, potatoes, carrots, or even experimenting with your favorite herbs and spices, the Instant Pot can handle it all. The steam created within the pot ensures that even the most delicate vegetables don’t turn to mush—just tender, flavorful bites.

  4. One Pot Wonder: Say goodbye to countless dishes. This recipe lets you brown your beef and cook everything in one pot, saving you time on cleanup while maximizing flavor.

Embrace the clever design of the Instant Pot as it revolutionizes your busy weeknight dinners, transforming simple ingredients into a meal you’ll want to share and savor. It’s not just cooking; it’s an experience that highlights comfort food at its finest.

Key Ingredients for Instant Pot Beef Stew

Making a hearty instant pot beef stew is all about choosing the right ingredients that come together to create a delicious, comforting meal. Each element plays a vital role in building layers of flavor.

Beef

I recommend using chuck roast for the richest flavor and tenderness. This cut has the perfect balance of fat and meat, which becomes melt-in-your-mouth delicious after cooking under pressure. Trim excess fat, but don’t remove it all—the marbling enhances the stew’s depth.

Vegetables

A classic combination of carrots, potatoes, and onions brings a well-rounded sweetness and texture. I love using baby carrots and Yukon gold potatoes; they hold their shape well and offer a creamy consistency.

Broth

Opt for beef broth to amplify the savory elements of the stew. Homemade stock is exceptional but store-bought works just fine—just check for low-sodium versions to control the salt level.

Herbs and Seasonings

Thyme, bay leaves, and garlic elevate the overall flavor profile. These herbs infuse the stew with warmth and aroma. A bit of black pepper adds just the right kick without overpowering the dish.

Tomato Paste

A couple of tablespoons of tomato paste add richness and depth to the stew, creating a subtle umami flavor that ties all the ingredients together beautifully.

By leveraging these key ingredients, you’re on your way to crafting a quick and satisfying instant pot beef stew that’s perfect for busy weeknights or cozy weekends.

Variations on Instant Pot Beef Stew

Exploring instant pot beef stew opens the door to a world of creative possibilities. With just a few simple tweaks, you can transform this classic dish into something uniquely yours.

Add Different Vegetables

While traditional beef stew features potatoes, carrots, and peas, consider adding seasonal vegetables like sweet potatoes, parsnips, or even butternut squash. These ingredients not only bring a pop of color to your dish but also introduce different flavors and textures.

Spice It Up

Elevate the flavor profile of your instant pot beef stew by incorporating spices like cumin, paprika, or even a pinch of cayenne pepper for a bit of heat. For an aromatic touch, add fresh herbs such as rosemary or thyme just before serving.

Go Global

Why not take a culinary journey? Try a Mexican-inspired version by adding corn, black beans, and a dash of lime juice. For an Italian twist, incorporate diced tomatoes, Italian seasoning, and serve it over polenta instead of mashed potatoes.

Experiment with Broths

The type of broth you use can drastically change the taste of your stew. Swap out beef broth for vegetable or chicken broth to create a lighter dish. Alternatively, a dark beer can add a rich, deep flavor that pairs beautifully with beef.

Every variation brings its own charm, making meal prep a delightful adventure!

Cooking Tips and Notes for Instant Pot Beef Stew

Creating a rich and savory instant pot beef stew is an exceptional way to warm up on a chilly day. Here are some tips to elevate your stew game:

Choose the Right Cut of Meat

For the best results, select cuts like chuck roast, which becomes tender and flavorful when cooked under pressure. Trim away any excess fat to ensure a rich taste without greasiness.

Brown Your Meat

It might be tempting to skip this step, but browning the beef first adds depth and enhances the stew’s overall flavor. Use the sauté function on your Instant Pot to get that lovely caramelization.

Veggie Variations

Feel free to mix up the vegetables according to seasonal availability! Root veggies like carrots and parsnips are fantastic, and don’t shy away from adding mushrooms for an earthy touch. Just be cautious not to overfill the pot.

Stew Thickness

If you prefer a thicker broth, remove the lid once cooking is complete and use the sauté function for a few minutes to reduce the liquid. Alternatively, you can stir in a cornstarch slurry (1 tablespoon of cornstarch mixed with 1 tablespoon of cold water) to achieve your desired consistency.

Let It Rest

After cooking, allow the stew to rest for a few minutes before serving. This helps the flavors meld even further, resulting in a deliciously hearty instant pot beef stew that warms both body and soul.

With these tips, you are well on your way to creating a comforting, soul-satisfying dish that friends and family will crave!

Description

A hearty and flavorful beef stew made in an Instant Pot.

Ingredients

Scale
  • 1/2 pound beef chuck roast, cut into 1-inch pieces
  • to taste Kosher salt and ground black pepper
  • 1 tablespoon vegetable oil
  • 3/4 cup beef broth or stock, room temperature
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1/2 teaspoon kosher salt
  • 4 garlic cloves, peeled
  • 2 large carrots, cut into 1-inch pieces
  • 1 small yellow or white onion, quartered
  • 1/2 pound (8 ounces) Russet, yellow, or red potatoes, cut into 1-inch pieces
  • 1 sprig thyme or rosemary + 1 teaspoon fresh leaves
  • 1/2 cup frozen peas
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 teaspoon lemon juice

Instructions

  1. Season the beef on both sides with salt and pepper.
  2. Add oil to the Instant Pot and select the Sauté button. When display says “Hot”, add beef in a single layer. Sear for 4 minutes or until brown then flip and sear another 3 minutes or until brown.
  3. Select Cancel. Add a small amount of the broth and scrape the brown bits off of the bottom with a wooden spoon (this will help prevent a Burn error). Finish adding the broth. Stir in the Worcestershire sauce, brown sugar, and salt.
  4. Add the garlic, carrots, onion, potato, and thyme sprig.
  5. Cover the pot with the lid and lock. Set the steam release valve to Sealing.
  6. Select the Meat/Stew button and set the cook time to 30 minutes. The screen will display “On” until the preheating cycle is complete, about 10 minutes (if ingredients are cold such as the broth, it will take longer to preheat). It’ll then change from “On” to “30”. Steam coming from the valve during preheating is normal.
  7. Once the cooking cycle has finished and beeped, allow the pot to sit untouched for 10 minutes for a natural release then move the valve to Venting for a quick release. Once the float valve is down and all pressure is released, unlock and open the lid. Remove the thyme sprig.
  8. Mix together cornstarch and water until smooth. Stir into the liquid then select the Sauté button. Once the mixture starts boiling, add the peas and cook until thickened, about 3 minutes. Stir in the thyme leaves and lemon juice.
  9. Select Cancel to turn off the heat. Let cool for 10 minutes before serving.
