- 1 lb fresh carrots, cut into ½-inch pieces
- 3 tbsp honey
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- ½ tsp salt (to taste)
- ¼ tsp black pepper (to taste)
- Fresh parsley (optional for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together honey, olive oil, minced garlic, salt, and pepper.
- Toss carrot pieces in the honey mixture until evenly coated.
- Spread carrots on a parchment-lined baking sheet.
- Roast for 25-30 minutes or until tender and caramelized.
- Remove from oven and sprinkle with parsley (if using).
- Serve hot.
