A delightful tart with a buttery shortbread crust and a tangy cranberry curd filling.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 12 oz fresh or frozen cranberries
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 tablespoon orange zest
- 4 large eggs
- 1/2 cup unsalted butter, cut into pieces
Instructions
- Preheat your oven to 350°F (175°C). In a medium mixing bowl, cream together softened butter and powdered sugar until smooth. Add salt and flour, and mix until a soft dough forms. It will resemble playdough in texture.
- Press the dough evenly into a 9-inch tart pan with a removable bottom, pushing it slightly up the sides. Prick the base a few times with a fork to prevent bubbling. Bake for 18–20 minutes, or until lightly golden. Set aside to cool while you make the filling.
- In a saucepan over medium heat, combine cranberries, sugar, water, lemon juice, and orange zest. Stir occasionally and simmer for about 10 minutes, or until the cranberries burst and the mixture thickens slightly.
- Transfer the cranberry mixture to a blender or food processor. Blend until smooth. Then, strain the puree through a fine-mesh sieve into a clean saucepan, using a spatula to press it through and remove skins and seeds.
- Whisk the eggs into the strained puree. Cook over medium-low heat, whisking constantly until the mixture thickens enough to coat the back of a spoon, about 8–10 minutes. Remove from heat and stir in the butter, a few pieces at a time, until melted and the curd is glossy and smooth.
- Pour the warm cranberry curd into the cooled tart shell, smoothing out the top. Let it cool at room temperature for 30 minutes, then refrigerate for at least 2 hours, or until fully set.
- Before serving, decorate with sugared cranberries, fresh mint, or a dusting of powdered sugar, if desired. Slice and serve chilled.

- For a sweeter tart, adjust the sugar in the curd filling according to taste.
