- 4 oz creamy goat cheese
- 2 tbsp fresh herbs (thyme or rosemary), finely chopped
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick.
- Cut into squares approximately 4 inches wide.
- Place a small spoonful of goat cheese in the center of each square and sprinkle with fresh herbs.
- Fold each square diagonally to form triangles, sealing the edges well.
- Brush the tops with beaten egg wash for a golden finish.
- Bake on a parchment-lined baking sheet for 20-25 minutes until puffed and golden brown.

- For an extra flavor kick, consider adding other herbs such as parsley or chives.
