A delightful salad featuring roasted grapes and tender kale, drizzled with a balsamic dressing.
Ingredients

- 4 cups fresh kale, chopped
- 2 cups grapes (red or green), washed and dried
- 2 tablespoons extra virgin olive oil, divided
- 2 tablespoons balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Spread grapes on a parchment-lined baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with salt. Roast for 15-20 minutes until soft and caramelized.
- In a large bowl, drizzle kale with remaining olive oil and salt. Massage the kale until tender.
- In a small bowl, whisk together balsamic vinegar, salt, and pepper.
- Toss roasted grapes with massaged kale and drizzle dressing over the top. Serve immediately.
Notes
- For a more intense flavor, let the roasted grapes cool slightly before tossing with the kale.
