Description

A light and delicious salad featuring massaged kale and roasted grapes.


Ingredients

Scale
  • 4 cups fresh kale, chopped
  • 2 cups grapes (red or green), washed and dried
  • 2 tablespoons extra virgin olive oil, divided
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread grapes on a parchment-lined baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with salt. Roast for 15-20 minutes until soft and caramelized.
  3. In a large bowl, drizzle kale with remaining olive oil and salt. Massage the kale until tender.
  4. In a small bowl, whisk together balsamic vinegar, salt, and pepper.
  5. Toss roasted grapes with massaged kale and drizzle dressing over the top. Serve immediately.
