Ingredients

  • 1 cup powdered sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • 2½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp red gel food coloring
  • ½ cup crushed candy canes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until smooth.
  3. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  6. Add the red gel food coloring and mix until evenly distributed.
  7. Roll dough into small balls and place them on a baking sheet.
  8. If desired, sprinkle crushed candy canes on top before baking.
  9. Bake in the preheated oven for 10-12 minutes or until cookies are lightly golden.
  10. Allow to cool before serving.
