Description
Delicious oatmeal chocolate chip cookies packed with flavor and a hint of pecans.
Ingredients

- 1 cup salted butter (softened)
- 1 1/2 cups sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups quick oats
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a large bowl (a stand mixer will work best) cream together the butter and sugars until fluffy.
- Add the eggs and vanilla and combine.
- Add the flour, cocoa, baking soda and salt and stir until combined.
- Stir in the oatmeal and nuts.
- Scoop onto prepared baking sheets and bake for 8-10 minutes. Add additional time as needed, but make sure to not overbake!
- Remove to a cooling rack.
Notes
- Make sure your butter is softened for the best texture.
- If you prefer a crunchier cookie, you can bake them a little longer.
