Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes with juices
  • 4 cups fresh spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Grated Parmesan cheese for serving (omit for vegan option)

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the diced tomatoes along with their juices. Stir in oregano, salt, black pepper, and red pepper flakes (if using). Cook for about 5 minutes, allowing the sauce to simmer.
  4. Add the chopped spinach to the skillet. Cook for another 3–4 minutes, stirring until the spinach wilts down.
