- 8 ounces spaghetti or your favorite pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes with juices
- 4 cups fresh spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- Grated Parmesan cheese for serving (omit for vegan option)
Instructions
- Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the diced tomatoes along with their juices. Stir in oregano, salt, black pepper, and red pepper flakes (if using). Cook for about 5 minutes, allowing the sauce to simmer.
- Add the chopped spinach to the skillet. Cook for another 3–4 minutes, stirring until the spinach wilts down.
- Add the cooked pasta to the skillet, tossing everything together until well combined and heated through.
- Sample your dish and adjust the seasoning if necessary before removing it from heat.
- Transfer the pasta to serving plates, and finish with grated Parmesan cheese if desired.
Notes
- This dish can be made vegan by omitting the Parmesan cheese.
