Description

This Cajun Grilled Salmon Salad is a delicious combination of flavors, featuring grilled salmon on a bed of fresh kale and vegetables.


Ingredients

  • 4 fillets salmon (skinless)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil (for grilling)
  • 4 cups kale (chopped and stems removed)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (sliced)
  • 1/2 cup red onion (thinly sliced)
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil (for dressing)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the salmon fillets with olive oil and Cajun seasoning.
  3. Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky.
  4. In a large mixing bowl, combine the chopped kale, cherry tomatoes, cucumber, and red onion.
  5. In a separate bowl, whisk together the lemon juice, honey, Dijon mustard, olive oil, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and toss to combine.
