Description

A creamy and delicious hummus made with chickpeas and tahini.


Ingredients

Scale
  • 1 15-ounce can chickpeas (strained and rinsed)
  • 1/4 cup tahini (stirred well before measuring)
  • 2 Tablespoons fresh lemon juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon fine sea salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground cumin (optional but recommended)
  • 3 Tablespoons extra-virgin olive oil (plus more for serving)
  • 3 Tablespoons ice water
  • to taste olive oil
  • to taste ground sumac
  • to taste chopped parsley
  • to taste quartered pita

Instructions

  1. Place all ingredients, except for water, in a high-speed food processor and blend until it starts to become smooth.
  2. Stream in the ice water and blend for 3-5 minutes until silky smooth.
  3. Transfer to a bowl to serve as-is or with a drizzle of olive oil, a sprinkle of paprika/sumac, and a sprinkle of chopped parsley. Enjoy!

Notes

  • Serve with quartered pita for dipping.
  • Drizzle with additional olive oil before serving.
  • Optional: Garnish with ground sumac and chopped parsley.
