These delicious no-bake chocolate chip peanut butter oat bars are a perfect snack or dessert that are easy to make and full of flavor!

- 2 1/2 cups rolled oats
- 3/4 cup creamy peanut butter
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
- 1/3 cup chopped nuts or seeds
Instructions
- Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, stir together the rolled oats, cinnamon, salt, and chopped nuts or seeds.
- In a small saucepan over low heat, warm the peanut butter and honey until smooth, then stir in the vanilla extract.
- Pour the warm peanut butter mixture over the oat mixture and stir until everything is evenly coated.
- Let the mixture cool slightly, then fold in the mini chocolate chips.
- Press the mixture very firmly into the prepared pan in an even layer.
- Bake for 20 to 25 minutes, until the edges are lightly golden and the center is set.
- Cool completely in the pan, then lift out and slice into bars.
Notes
- For a crunchier texture, consider adding more nuts or seeds.
- These bars can be stored in an airtight container for up to a week.
