Description

Delicious and tender slow cooker beef short ribs cooked in a savory sauce.


Ingredients

Scale
  • 3 pounds beef short ribs
  • 3/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1 cup beef broth
  • 6 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons gochujang
  • 1 medium onion, sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Pat the short ribs dry and season them lightly with salt and black pepper.
  2. In a bowl, whisk together the soy sauce, brown sugar, beef broth, garlic, ginger, sesame oil, rice vinegar, and gochujang.
  3. Spread the sliced onion in the bottom of the slow cooker and place the short ribs on top.
  4. Pour the sauce over the ribs, making sure they are well coated.
  5. Cover and cook on low for 7 to 8 hours, until the meat is very tender.
  6. Carefully remove the short ribs from the slow cooker and set them aside.
  7. In a small bowl, stir together the cornstarch and water to make a slurry.
  8. Stir the slurry into the hot cooking liquid in the slow cooker and let it thicken for 10 to 15 minutes.
  9. Return the ribs to the sauce or spoon the thickened sauce over the top.
  10. Garnish with sliced green onions and sesame seeds before serving.

  • Feel free to adjust the spice level by adding more or less gochujang.
