Delicious and tender slow cooker beef short ribs cooked in a savory sauce.

- 3 pounds beef short ribs
- 3/4 cup soy sauce
- 1/2 cup brown sugar
- 1 cup beef broth
- 6 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons gochujang
- 1 medium onion, sliced
- 2 tablespoons cornstarch
- 2 tablespoons water
- 3 green onions, sliced
- 1 tablespoon sesame seeds
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Pat the short ribs dry and season them lightly with salt and black pepper.
- In a bowl, whisk together the soy sauce, brown sugar, beef broth, garlic, ginger, sesame oil, rice vinegar, and gochujang.
- Spread the sliced onion in the bottom of the slow cooker and place the short ribs on top.
- Pour the sauce over the ribs, making sure they are well coated.
- Cover and cook on low for 7 to 8 hours, until the meat is very tender.
- Carefully remove the short ribs from the slow cooker and set them aside.
- In a small bowl, stir together the cornstarch and water to make a slurry.
- Stir the slurry into the hot cooking liquid in the slow cooker and let it thicken for 10 to 15 minutes.
- Return the ribs to the sauce or spoon the thickened sauce over the top.
- Garnish with sliced green onions and sesame seeds before serving.

- Feel free to adjust the spice level by adding more or less gochujang.
