Miso Marinated Chicken Thighs

Description

Deliciously marinated chicken thighs with a flavorful miso, garlic, and ginger sauce, perfect for baking or air frying.


Ingredients

  • 1 lb (500g) free-range, boneless, skinless chicken thighs
  • 2 garlic cloves, peeled
  • 1-inch piece ginger (or use 1 teaspoon ginger paste)
  • 2 tablespoons white miso paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon light soy sauce
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1 scallion (spring onion), finely sliced
  • Handful of cilantro (coriander) leaves
  • 1 tablespoon sesame seeds
  • 1 tablespoon sweet chili jam (optional)

Instructions

  1. Grate the garlic and finely chop the ginger. If you’re grating ginger, there’s no need to peel it.
  2. In a small bowl, combine the garlic, ginger, miso paste, rice vinegar, soy sauce, honey, and olive oil. Mix until cohesive.
  3. Place the chicken in a large mixing bowl or container. Pour the marinade over the chicken and mix thoroughly, ensuring every piece is coated. Marinate for at least 15 minutes.
  4. Preheat the oven to 400°F (200°C). Take the chicken out of the fridge to take the chill off.
  5. Arrange the chicken in a single layer in an ovenproof dish or lined sheet pan. Bake for 15 minutes until the chicken has changed color.
  6. Move the dish to the top of the oven and broil on the highest setting for about 5 minutes, until charred bits appear.
  7. Alternatively, place the marinated chicken in an air fryer basket and air fry at 400°F (200°C) for 12 minutes, flipping halfway through.
  8. Remove from the oven or air fryer and let the chicken rest for five minutes before slicing. Serve with sliced scallion, cilantro leaves, chili jam, and sesame seeds.

  • Grating the garlic rather than crushing it enhances the flavor.
  • Consider slicing the chicken into smaller pieces before cooking if desired.
