Description
Deliciously marinated chicken thighs with a flavorful miso, garlic, and ginger sauce, perfect for baking or air frying.

- 1 lb (500g) free-range, boneless, skinless chicken thighs
- 2 garlic cloves, peeled
- 1-inch piece ginger (or use 1 teaspoon ginger paste)
- 2 tablespoons white miso paste
- 1 tablespoon rice vinegar
- 1 tablespoon light soy sauce
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 scallion (spring onion), finely sliced
- Handful of cilantro (coriander) leaves
- 1 tablespoon sesame seeds
- 1 tablespoon sweet chili jam (optional)
Instructions
- Grate the garlic and finely chop the ginger. If you’re grating ginger, there’s no need to peel it.
- In a small bowl, combine the garlic, ginger, miso paste, rice vinegar, soy sauce, honey, and olive oil. Mix until cohesive.
- Place the chicken in a large mixing bowl or container. Pour the marinade over the chicken and mix thoroughly, ensuring every piece is coated. Marinate for at least 15 minutes.
- Preheat the oven to 400°F (200°C). Take the chicken out of the fridge to take the chill off.
- Arrange the chicken in a single layer in an ovenproof dish or lined sheet pan. Bake for 15 minutes until the chicken has changed color.
- Move the dish to the top of the oven and broil on the highest setting for about 5 minutes, until charred bits appear.
- Alternatively, place the marinated chicken in an air fryer basket and air fry at 400°F (200°C) for 12 minutes, flipping halfway through.
- Remove from the oven or air fryer and let the chicken rest for five minutes before slicing. Serve with sliced scallion, cilantro leaves, chili jam, and sesame seeds.

- Grating the garlic rather than crushing it enhances the flavor.
- Consider slicing the chicken into smaller pieces before cooking if desired.
