- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 cup jasmine rice
- 2 cups chicken broth
- 1/4 cup green onions, sliced
- 1 pound chicken thighs
- 1 cup canned pineapple, drained
Instructions
- Prep all your ingredients: cube the chicken and pineapple, and slice the green onions.
- In a saucepan, bring 2 cups of water to a boil. Add the jasmine rice, cover, and let it simmer on low heat for about 15 minutes until tender.
- Heat a large skillet over medium heat. Add the cubed chicken breast and cook until golden brown, about 5–7 minutes.
- Stir in the cubed pineapple and chicken broth. Let it simmer for about 5 minutes.
- Once the rice is ready, add it to the skillet and mix well. Heat through for an additional 2–3 minutes.
- Garnish with sliced green onions and serve hot.
Notes
- This dish can be adapted by using fresh or canned pineapple based on availability.
- Adjust the cooking time for rice based on package instructions if necessary.
