Description

A delightful tropical dish featuring chicken and pineapple combined with jasmine rice.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1/4 cup green onions, sliced
  • 1 pound chicken thighs
  • 1 cup canned pineapple, drained

Instructions

  1. Prep all your ingredients: cube the chicken and pineapple, and slice the green onions.
  2. In a saucepan, bring 2 cups of water to a boil. Add the jasmine rice, cover, and let it simmer on low heat for about 15 minutes until tender.
  3. Heat a large skillet over medium heat. Add the cubed chicken breast and cook until golden brown, about 5–7 minutes.
  4. Stir in the cubed pineapple and chicken broth. Let it simmer for about 5 minutes.
  5. Once the rice is ready, add it to the skillet and mix well. Heat through for an additional 2–3 minutes.
  6. Garnish with sliced green onions and serve hot.
