Delicious stuffed bell peppers filled with a savory mixture of ground beef, rice, and cheese.

- 4 to 6 bell peppers (any color, but red and yellow are sweeter)
- 1 pound ground beef (or swap with turkey)
- 1 small onion, diced
- 2 to 3 cloves garlic, minced
- 1 cup cooked rice (white or brown)
- 1 cup marinara or tomato sauce
- 1 to 2 teaspoons Italian seasoning
- Salt and pepper
- 1 to 1.5 cups shredded cheese (mozzarella, cheddar, or a mix)
- Olive oil
- Optional: chopped parsley, red pepper flakes
Instructions
- Preheat your oven to 375°F. Lightly oil a baking dish that fits your peppers snugly.
- The peppers: Slice the tops off, pull out the seeds and white ribs. Trim the bottoms if necessary to avoid tipping.
- But worth it: Pre bake the peppers for 10 to 12 minutes to help them get tender.
- The filling: In a large skillet, sauté onion in olive oil until soft, add garlic for about 30 seconds, then add ground beef, season with salt and pepper, and cook until browned. Drain excess grease if needed.
- Add in rice, marinara, and Italian seasoning. Simmer for 2 to 3 minutes until thickened.
- Stuff the peppers with the filling, top with cheese, and bake uncovered for 20 to 25 minutes.
- Let cool for 5 minutes before serving.
Notes
- Feel free to customize the filling with different vegetables or beans for added nutrition.
